Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

22 Oz Bottle. Sustained heavy fruit soap, laced with a plethora of desert grasses and broadleaf oils. Pours a thick, clouded amber orange, cherry juice glint. Rim of silky soap, heavy and lacing rests atop. Tinted banana. Flavor is intense in really one dimension of fading hops. Savory, of roasted vegetables, heavily citrus candy and oxidation. Plenty of malt body and not really overly sweet. Attenuated as this beer should be, I suppose. A real mouthful of sugar, yeast products, celery hops and alcohol. All too much really. Dense and overwhelming. Not a well played triple IPA in my book. Finishes soapy and with biting celery seed. Thanks Shaun!

Pours a beautiful, full-of-grunge amber, with hints of sweet (too sweet) strawberry, orange, and pine. Taste is a nice blend of grapefruit, orange, and a bit of pine; however, the finish reminds me of sawdust. Nice palate. Great beer if not for the flat finish of the flavor and the too-sweet nose.

No date on bottle but I’ve owned this one for a while, finnaly couldn’t resist being the IIPA freak that I am. Hazy amber orange brew, thick foamy head. Heavy syrupy sweet citrus aroma. Oww heavy acid-like burning warmth, deep bitterness, heavy body, not alot of flavor to be noticed, the burn overwelms all senses. As Cheech & Chong would say, "This is some good chit man".

Aroma: strong earthy hop aroma with a bit of sweet malt,
Flavor: hot carmel malt flavor, nice sweetness, long very bitter finish

Aroma: still plenty of hop aroma but picking up more of the caramel and a hint of sweetness is beginning to emerge,
Flavor: the flavor is getting a lot more sweet dark caramel character and as expected the hops are receeding but still very present and in great balance with the increasing malt profile, even the bitter finish is more balanced,

22 oz bottle 6/28/07: Hazy orange/amber w/ a lasting light beige head... Very creamy & frothy! Slight plasticky aroma @ first, but it becomes lightly floral w/ hints of diacetyl. Toasty malt, & perfumey, solventy alcohol. Fruityiness from fermentation & alcohol. Light sherry & caramel notes. Well balanced flavor... Caramel & bready malts, floral and herbal hops... Finish is semi sweet w/ herbal and floral hops in the aftertaste... I know the description says grapefruity is not there, but I get a little bit.... Bready malt lingers wellinto the aftertaste which is also caramel and sherrylike. Medium body and CO2, creamy, smooth m/f, and very well hidden alcohol. One of Weyerbacher’s strong beers that I really like. Seemed nicely aged, but still fairly young. Not a hop bomb like most IIPA’s, which I like.

Quite a hoppy nose, golden, tiny off-white head. Taste is hoppy, hoppy, hoppy then some underlying malt.Full bodied,sweet and btter. Great! Thank You HogTownHarry!

The pour reveals a cloudy amber color with a thin white head. Aroma and flavor of hops and alcohol with a bitter finish. The alcohol is way too present, it disturbs the tasting experience.
