Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Bottled. Deep rich sweet aroma. Oak and caramel apples, musky fruity notes. Toasted grain and velvety resinous notes. Subtle and enticing, not as overpowering as I would have expected. Deep orange-amber clear, with off-white foamy lacing head. Heavy body, almost oily, with medium carbonation. Quite a warming sensation going down, leaving a bit of carbonic burn. Starts with heavy alcohol presence, rich toasted maltiness with caramel and brown sugar. Nice oak flavor atop an almost too-sweet, cloying sweetness. Big bitter comes in to wash some of that away, but not the fresh grassy-floral-fruity type of hops presence. Has a good balanced bitterness to it at first, which turns to more of a chalky bitterness and heavy bitter on the tongue in the aftertaste. Pine needles. Don’t know if this would serve with some aging or not, but it’s still a little hot.

(bottle - 22 oz) Cloudy and viscous orange pour with a thick and creamy tan head. Aroma is very floral and hoppy with lots of sweetness and some malts in it. Flavor almost tastes burnt from all the hops and floral notes. Big and sweet finish at the end with a very bitter aftertaste. Way too much going on in it.

Thanks for the bonus bottle from the Epeeist! Tried on 8/5/2007, so I’m guessing the bottle has aged a year. Nice 1 finger head that quickly dies. Aroma of sweetened hops, and lovely caramelized malt. Pure amber color. Medium body. The IBUs are still pounding through the flavor even after a year of mellowing. Wonderful hop variety with no off flavors. Excellent beer. I’m really starting to like aged strong IIPAs.

Thank you Coldbrewky/Steve for yet another nice Weyerbacher. It’s dark golden with a huge, golden, lasting and creamy head. The aroma is wonderfully hopped with notes of pine, citrus and caramel, and it gives me a balanced first impression. The flavour has slightly sweet notes of citrus, fruit, spruce and then there is a crushed plum-pit note, that gives an almost tart bitterness. There also are caramel notes, but rather subdued. It’s really nice, but I wouldn’t have minded it, if the caramel had a slightly more pronounced role to play. 2440

22oz bottle, a lil old, but this one is gross to me, metallic taste that is prevalent throughout the beer, 11.7% alcohol which burns every sip, not a good one, decent fruit and hop profile but overcame but Metallic taste, perhaps a bad bottle, 2.8 just for sheer Trying.

Thanks Mystery Swap 2.0--I can’t remember who sent this to me. I hope this fellow hasn’t been aged too long. Cloudy reddish brown with a 1/2 finger beige head. Lemon, strawberries, and tangerines are up front in the aroma. Very fruity. There is a bit of caramel as well. Flavor a big boozy quality and a lot of earth. There is the "berry" flavor that is claimed, but damn there’s a lot of alcohol. There’s also a good dose of earth and caramel. moderate carbonation with a full body. Actually ended up pretty decent.

NorCal tasting July 07 - This was an abomination. I’m really suprised at how awful this crap was, because the products I’ve had from Weyerbacher have been gernally tasty. But this beer deserves no mercy. For me, it was a train wrech. An aroma of dog collar, slight smoke and citrus fruit. Appearance was a medium amber in color with a smallish white head. Mouthfeel was stinging. Flavor was overly sweet, earthy hops with a ton of alchol. It reminded me like someone dumped a bunch of booze in the beer as it sat awaiting to be bottled. How anyone could drink all of a 22oz bottle is hard to conceive. This was from a 12 hoz bottle and it was horrible enough.

Off white head that lingers for a good long while. Cloudy light brown pour. Are there other triple pale ales??? This isn’t like any other double I’ve tasted. Tons of sweet hoppy goodness with a bit of a nutty aftertaste..
