Commercial Description:
Foxtrot is an exceedingly complex ale brewed with six types of malt, two hop varieties, and one flavorful yeast strain. This dark, unfiltered concoction has upfront notes of molasses and white pepper, a middle filled with a roastiness reminiscent of iced coffee, and a finish layered with a light fruitiness and the delicate flavor of Saaz hops. Recipe by cellerman, Dan Hitchcock. Dark Biere de Garde.

(draft) Beige head atop clear mahogany body. Aroma is moderately sweet, caramel, cherry, candied orange, some smoke. Taste is moderately sweet, caramel, molasses, orange, some chocolate, light smoke. Medium body, smooth, light stickiness.

(12oz bottle) Pours a dark brown (near black) body with medium beige head. Aroma of anise, roasted malt, caramel, and fennel. Flavor of anise, roasted malt, toasted chestnuts, light pepper, and dates with a dry, earthy finish.

12oz bottle. Poured a medium to deeper brownish color with a smaller sized off white head. Aromas of bananas, chocolate, and spices. Tastes of bananas, spices, earthy, and chocolate.

Draft… Pours very dark with a small, creamy, khaki head. Good retention. Chocolaty, spicy, banana aroma. Medium-bodied with middling carbonation. Well-balanced flavor. A touch tangy and a bit spicy... chocolaty as well. Finishes crisp and refreshing.

Pours copper with a thin white head. Smells of raisins, dark fruit, earthy. Tastes herbal an spicy with some sweet caramel hints and a funky element on the finish.

Tap at Spuyten Duyvil. Deep hazy brown colour. The aroma is quite fruity and spicy. A touch of bready aroma and a little bit of light yeastiness. Chewy and sweet with a bit of dustiness. Lightly husky with a touch of astringency and a bit of soft earthiness. Lightly spicy with a soft roastiness toward the back. A bit strange and most definitely not a biere de garde.

Draft @ Paradiso. Dark appearane, dunkel or dubbel-like in color. Toffee, nuts, cold coffee, some roast, Dunkel-like in nose and flavor. Bread/bran is present, yeast gives a strange lightness and pastiness to the body, doughy but not chewy. Not really anything close to biere de garde, more like a dunkel with Belgian yeast.

Draft at Craft. Pours deep caramel brownish with off-white head. Nose is yeasty spice, malty, brown sugary, florals. Tastes dark malty, with caramel, cacao, spicy yeast, molasses, and white pepper in the flavor. Complex and unique on the palate, and indeed unlike any bier de garde you have ever had the pleasure of drinking. Purists will go crying to their mommies, but this one has a uniqueness that breaks down the barriers between BDGs and dark malts.
