Commercial Description:
This is an incredibly intriguing ale is made by aging our Old Heathen Imperial Stout in oak barrels that were used for making fine Kentucky bourbon! The result is an extraordinary, dark, and mysterious stout whose very essence has been enhanced. The aroma is filled with vanilla, cocoa, and roasted coffee beans. This silky-smooth brew has notes of oak, whiskey, roasted barley and vanilla that meld together on the tongue to create an incredible sensation. Heresy is released in February.

12-oz bottle from jjpm74. Pours an opaque thick liquor, rocky diminishing tan head. Aroma is dark sour chocolate malt (straw, meal), ashy toasted malt, oak and vinous notes, yeast (earth), caramel and molasses. Dark bitter chocolate and coffee flavor, medium acidity and creamy, drying and spicy finish. Dark bodied, creamy palate, spicy and slightly dry end.

Draft, Baja Bean, Staunton VA. Great holy bejeesus this was good. Black, thinning to red at the edges, with a brown head. Nose of whiskey, wood, vanilla, dark and sweet chocolate, dark fruit, and alcohol. Flavors of all of these, very nicely balanced, focusing on a rich alcoholic chocolate with a creamy mouthfeel and nice warmth throughout. Very nice, and would have been over the top with a bit of hoppiness a la Stone or Brooklyn.

"Poured a dark brown with nice head not what i expected at all. Aroma was of wood and coffee. FLavor was nice amount of coffee and some wood to it. Mouthfeel was almost heavy. Solid beer, not amazing but solid. "

Bomber (I think) into tulip, The Friday impy stout tasting, summer 2005. Tasted blind. Fruity bourbon smell with a bit of vanilla. Flavor is lightly acidic with a large roasty center and soft powdered chocolate sweetness riding over it. Finish is nicely dry with distinct alcohol that warms the throat all the way down. Enjoyable.

(03.26.06) Stout/porter sampling with Scott, Tony and Walt at DiCarlo’s, Mundelein, IL. 12 oz brown bottle from trade with Firemoose15. Undated. Poured black with small tan head. No discernable carbonation. Sour aroma in the nose. Medium bodied stout that starts with light malt sweetness and oak wood/prune flavors. Slight acidity/sourness in the mouth. Possible infection or old oxidized bottle? Finishes with light malt fade and sour aftertaste. Sour off-flavor detracts from the enjoyment of this beer. This beer deserves a re-rate if I can find a fresher bottle. Thanks Firemoose15 for the bottle. UPDATE (06.04.06) Beer tasting at DiCarlo’s, Mundelein, IL, complements of Scott L. Poured brown black with small off-white head. Medium bodied stout that started with light malt sweetness and vegetal green peas and fruity (prune) flavors. Some slight tanginess. Finished with light bitterness. Rather watery with very little black grain flavor. Again, a surprisingly disappointing stout from Weyerbacher. Scott went to the trouble of securing a fresh bottle of this stout for this re-rating - extra thanks to Scott. Rating remains unchanged.

O, a caged and imprisedoned old heathen, what do ye but ripen in your heretic ways and exhume the depths of transcendental knowledge. Ye taste just like an irish coffee, tons of whisky and scotch on some dark black unwashed limey’s beans.

2005 bottle. A punch in the face from the first wiff. Big alcohol smell and taste and something that could do damage. Good strong aroma with a good look and thin head. Could taste the malts and slight JD bourbon oak. God imperial stout. Cheers! Re-rate on a 2005 bottle. Big vanilla aroma. Thick mouthfeel and decent vanilla taste. Good but could use less time in a barrel.

On tap. Pours a dark black with tan head. Raosted malts, vanilla, some alcohol and chocolate combined to make a compelx aroma. Roasted malts up front with a trailer of chocolate and coffee. A fine brew!
