Commercial Description:
Formerly Weyerbacher Belgian Triple.
At Weyerbacher we've recreated a Belgian Trippel without limitation. We use premium Pilsener malts, candi-sugar, and yeast strains- all imported from Belgium. To be true to the style, our Trippel is bottle conditioned. This means we add a bit of candi-sugar and yeast just prior to bottling. This imparts a special effervescence to the beer, a creamier carbonation, and also extends the shelf life. The on-going fermentation inside the bottle will change the character of the beer as it ages, and you'll find it becomes dryer with age. You may want to lay down a few bottles for future evaluation. We suggest storing at cellar temperatures -around 55 degrees F- and away from light.

Rated 1/11/07: Merry Monk’s is a rather hearty tripel, nicely crafted but lacks some strength in a couple areas of what makes a great tripel. Aroma is very malty with some nice fruity tones along with a small amount of spice. Nice pour, good rich dark golden color decent white head and strong steady carbonation. Mouthfeel is very malty with a touch of alcohol but still relatively smooth and easy. I thoroughly enjoyed the flavor but to be fair it lacked that peppery spiciness and needed a stronger fruit component to rank it any higher. Nice yeastiness and as previously stated the malt content can’t be questioned. Mmmm, not bad at all.

Poured a opaque reddish color with a white head. Has some lacing. Hints of cotton candy, malt, and thats about it. Finishes with a sweet syrupy feel on the tongue.

Pours golden with a thin head.Has a sweet aroma.Flavor is semi sweet witht he candy sugars.Had tastes of sugar free trident?Strange but not bad.

12 oz. bottle. Pours a hazy gold with a thin, white, sudsy head. Sweet aroma of sugar, honey and hint of citrus. The flavor is decidedly sweet with the sugar front and center. There was also a little bit of citrus and spice in the flavor as well. The alcohol was fairly well hidden. A better than average interpretation of the style.

Pale golden colr with a well formed head. Sweet aroma and sweeter flavor. Bits of alcohol on the aftertaste.

12oz bottle. Orange-golden color with sediment in suspension; thin white head. aroma of yeast, orange, mango, and clove. Sweet candi sugar, apricot, and caramel flavor, with yeast and alcohol. Some alcohol burn in the finish.

Come out looking like a thin tripel. Slightly peachy soft amber, a little haze, but not much. The head is lacking for the style as well. Thin, frothy, white. the aroma is pretty sweet, some dryness, bubblegum. Has a sweet superficial Belgian taste. Some spice and warm dry alcohol. The palate is thin for an abbey beer. the finish was pretty dry. The alcohol is evident in every aspect.

Hazy, deep copper body with minimal white head. Strong phenolic smell of pepper and mustard and some sweet honey. Flavour of honey, maple, toasted biscuits, herbs, phenols, orange peel, and ripe banana. Sweet and slightly sticky mouthfeel.
