Commercial Description:
Formerly Weyerbacher Belgian Triple.
At Weyerbacher we've recreated a Belgian Trippel without limitation. We use premium Pilsener malts, candi-sugar, and yeast strains- all imported from Belgium. To be true to the style, our Trippel is bottle conditioned. This means we add a bit of candi-sugar and yeast just prior to bottling. This imparts a special effervescence to the beer, a creamier carbonation, and also extends the shelf life. The on-going fermentation inside the bottle will change the character of the beer as it ages, and you'll find it becomes dryer with age. You may want to lay down a few bottles for future evaluation. We suggest storing at cellar temperatures -around 55 degrees F- and away from light.

Pours a gold color, slightly cloudy, with a medium head that disappears quickly. Mistakenly let out some of the yeast at the bottom of the bottle, so had some solids evident in my pour. Aroma of citrus hops and some spices. Taste has light citrus, hops, some spices, and some offsetting sweetness. Decent carbonation.

Thanks daknole. Pours a hazy orange-gold with a thin white head that soon simmers down to a ring. Aroma is mainly yeasts, and quite pleasant. Flavor is yeasty on the front, fruits and spices emerge on the mid-palate, banana, cinnamon, and clove, sweet, and then a bitter, alcoholic finish, slightly fusel, not as pleasant as the beginning. Lingering pear and floral notes. Medium bodied, effervescent in the mouth, drying out on the finish.

Aroma was as big and fruity as any Belgian Triple I ever had. Sunshiney cloud of pear and banana, you can actually smell sweetness,which is surprising because the taste is not that sweet, those fruit flavors come out along with slighly heavy malt and a sharp dose of bitter hops that drys out the taste in the end. Worth it just for the aroma

Pours a hazy yellow-orange gold with a medium sized frosty white head. Unfiltered with lots of hops floating around. Aroma of candied sugar, spicy esters, banana, cloves and yeast. Taste of spicy candied sugar, bananas, cloves, yeast and bread.

Bottle. Very hazy yellow color, minimal head. Flavor is soft and bready, notes of fresh bread, bananas, and yeast. Just a hint of spice. Medium bodied. Smooth easy finish. Delicious.

For me, Weyerbacher nails it once again. I am not your typical lover of trips but this one was very good. It pours a golden color with amber highlights with a nice head that stays around. The aroma is slightly spicy with dry fruits and the yeast or earth like smells coming through. It is sweet and smooth on the taste and the alcohol was tough to pick up.

I wouldn’t say that everyone is familiar with the image of a monk sitting oh-so-merrily by a barrel of fresh ale, but for the large majority, I would say that it is a rather common and amusing image. While not exactly accurate, it is true in that monks do brew and barrel and sell some of the best beers available in the world. Period. They may be aware of their comedic image overseas and even in their own countries, but that hasn’t stopped them from a long line of history, heritage, tradition, spiritualism, and beer. While not from a trappistry or abbey, the Weyerbacher Merry Monk Ale is a worthy candidate for monkish merriment by any who drink it. So far Weyerbacher has not disappointed me, and I delve into their Merry Monk Ale with much lip-smacking anticipation.
My Merry Monk Ale poured a dullish, cloudy orange into my goblet while a soft and prominent head rose to the glass’ lip before fading slowly into a solid blanket. Faint traces of lace guide her sour, yeasty bouquet to my nose where I also savor notes of coriander, orange, wet dough, and spices. Divine inspiration, if I do say so myself, and with my tongue wet in anticipation, I delve into her liquid depths. Very smooth, soft, and chewy with hints of banana cream while at the same time bursting with spices in the middle and finish. Coriander, orange peel, and clove nip at my tastebuds and the back of my throat. As I savor more of my glass, a slowly creeping warmth envelopes my senses; an always pleasing reminder of the alcohol presence in this particular style of beer. Her simplicity in nature is an attribute to the Tripel style, while her subtle complexity lends a new appreciation to each quaff. As I unfortunately reach the end of my glass, I am left with a pleasantly warm and dry finish of sour yeasts, dough, spices, cloves, coriander, and orange peel.
Once again Weyerbacher Brewing out of Easton, PA has won my heart with an amazingly crafted beer, this time Belgian inspired. In a most traditional manner and respect, they have bottled a stellar reproduction of a tripel, one which would make any merry monk proud to call his own. May I have another, please.

Golden orange pour with an nice fizzy blanket of white head that stuck around. Much better than expected. Not as citrusy as some or as yeasty.-- in other words, I didn’t find it super true to style -- but I still liked it. Sweeter than expected. Honey and Belgian sugar. mild citrus and yeast. I think this was a slightly older bottle. I’d drink again.
