Flavor is very yeasty, some bacteria/funk to it. Lightly oaky and sweet. Is very thick, yet somehow not in a bad way, manages to not be cloying but yet have heft. Citrus aroma is the only redeemable quality of this beer. Unbearably strong alcohol and yeast taste. Tastes like really badly fermented apple cider... kinda like vinegar. Small to medium sized white foamy head. Aroma is apple juice, bourbon, oak and herbs. Slightly sweet. A medium bodied triple. Malts are fruity and sweet, lots of apple and pear flavors. Nice touch of bourbon and oak, but mostly apple and fruit. The bourbon and oak takes a little of the edge off all that sweetness. A bourbon barrel aged bottle is sort of weird, yet it sort of works. The bourbon and oak are muted, which may be due to this bottle being cellared for few years. Very smooth. Nice level of carbonation. Hides the 9.3% alcohol well. Mouthfeel is full and round. Pours like sparkling apple juice. Sweet/sour fruits apple, pear. Vanilla (oak?) and some dough. The beer is hopped like a belgian ale (I didn’t know the style at the time. I see that it is...) with corriander and cloves. Some interesting combinations. Tartness more apparent toward long sweet & sour finish. I guess the barrel-aging added a lot of depth, but I think it threw the beer out of whack.
