Hazy blonde body has plenty of particulate in suspension and is topped by a low white head that recedes rapidly to partial cover and ring. Alcohol and bourbon take up a lot of room in the fruit salad of a flavour with plenty of marachino cherry and pineapple. Vanilla coasts out the aftertaste after a punch of alcohol and moderate bitterness. Some diacetyl. Medium light body is quite dry and well attenuated with strong carbonation and a somewhat slick and sticky texture. Chalice. Cellar temperature. Bottle (RBSG leftovers, Jul-05). Enjoyable, refreshing with dinner. Maltiness without cloying, no extreme alcohol present,moderate pineapple in finish, a good Belgium. Medium mouthfeel. Good effort.

Oddly reminiscent of a mead I tried, only with more complexity. Flavor has a strong taste of white grapes, vanilla, and its own unique tinge. Rather hard to describe.

Aroma had characteristics of butterscotch, vanilla and oak. The spicyness that was noteworthy in the taste of the original Merry Monks seemed more subdued in this version. The yeastyness and candi-sugar are still there, along with an apple like fruityness. Aroma is a mess with notes of pepper, fruits (oranges and lemons) , yeast (apple) and oak. Like the description, it’s a Tripel aged in an oak barrel. While the flavor has all of these notes, the flavors are jumbled and all over the place. I love oak aged beers, but it didn’t seem to work here. Perhaps this needs some time to age, because these flavors are about as balanced as a Red Sox fan and a Yankees fan talking on a sports radio show. Nose is bourbon through and through. Way to boozy in the nose. Flavor is much the same, there are some sweet fruity notes present.
