White mostly dissipating head sits atop a clear golden yellow body. Sweet, cookie malts, dough, butterscotch, banana, bourbon. Light to medium, faintly syrupy body. Well, this will definately get you drunk. Its a nice combination that works, but isnt quite balanced. The nose of paint thinner and rubber cement is a turn off. Perhaps after some time in the cellar. Flavor had a kick to it that all decent belgians have. I tasted a sweet fruit and woodsy taste, that much be from the oak barrels. It was easy to drink, and when it warmed that only brought out more complex woodsy and fruity flavors.

Wow, I expected this to be more of hoppy ale than a Belgian, since I didn’t read the description here. Nose is nice and yeasty. Sour aroma (again, the good sour) and a cloudy light color with no head at all. The first thing that I notice in the flavor is a nice bite along with that great sourness and tartness that a decent Belgian has. This is a good tasting beer with some cool spiciness and almost a cookie dough quality to it. Maybe that comes from the barrel aging, but it is good. The palate is great! Silky smooth and slippery as it crosses the tongue and glides across the palate. Nice and oily feeling. Finish is dry, but it balances so well with that slight sweetness, that it is not a turn off for me as most dry beers are. This is good stuff. Another quality beer from Weyerbacher. Obvious bourbon barrel treatment with flavors of vanilla, wood and the corriander spices of the tripel. Noticable alcohol. It seems a little thin. I need to try the Merry Monks’ again.
