Smells of white wine,wet wood,and bitter lemon. Taste is very bitter with a lemon lime aftertaste. Slight bourbon detection. One can mistake this beer for wine. Not a big fan of this. Aroma is peary, sweet, slightly chocolately, and alcohol. Flavor is smooth and burbouny with sour raisiny notes. While that is a mediocre tripel, I found this to be a much more complex and wonderful brew. Some smokiness sneaks in as does the bourbon notes. Some more complex fruity notes than in the original. Sandy goldings come up the nose which is heavily whiskeyish through its harsh alcohol fumes. Another fuelic weyerbacher. Ultra sweet palate despite the moderate hoppinbess. Peaty yet pale, call it earthy. Almost oaty, biscuity breadiness. Interesting hop flavors of orange, apricot, but the damage is done. Very potent aroma of apples, spice, lemon, yeast, oak and alcohol. The taste was very unexpected. Not knowing what kind of beer it was when I took a sip, I did not know what to look forward to. There was an explosion of flavors. Lots of sweet flavors; apples, yeast, lemon and lots of oak. Very well blended and surprisingly drinkable. Definitely a good beer to age.
