I think the barrel-aging mellowed and balanced this beer (merry monks). You really lose the clove taste, and the flavor seems to come together. Much improved, in my opinion, through barrel-aging. 11026 (1799), Alabama, USA

Nice lacing. Aroma really reminds me more of chardonnay than a tripel or bourbon. Light fruits, apple, really kind of appealing. Medium bodied, perhaps a bit more boozey tasting than I would like, perhaps it is just stronger than it smells. A bit of lasting alcohol burn. Overall, pretty tasty. It was good ice cold but as it sat the hardness and nasty bitterness came thro. A trippel abbey is good when it’s a belgium style. It has a medicinal aroma, tinted with a bit of potpouri spiciness. Obviously at 9%, this carries a heavy alcohol-laced basis, which to me comes across with almost the earthiness of an Irish whiskey, completely out of sorts with the light color of the beer. Hazy pale golden beer. Aroma is very Belgian but more in the sweet honeyed malt profile than anything else. Loads of bubble gum, candi sugar and fried banana. There is also some apple and pear lingering around in the back as well. The bourbon only becomes noticeable as the temperature come up giving a soft sweet oaky aroma with vanilla, honey, light caramel and some clovey, spicy notes as well. Flavour is quite well-balanced. Toasty caramel and vanilla from the bourbon mixes nicely with the spicy, fruity triple base. I like this much better than the beer that it started out as, so that’s got to be a good thing. As the temperature keeps getting higher the beer becomes a little bit boozy. This has a very narrow range of temperatures at which it is really good, but when it’s in that range it’s pretty tasty.
