Commercial Description:
In 750ml corked ’n’ caged bottles this will be and unfiltered, fully bottle conditioned version of the super popular Double Simcoe. Expect Cask taste in a bottle, with more pronounced hoppy flavor and aroma due to being unfiltered. Also, carbonation will be a bit higher as is usual in our cork n cage series in keeping with tradition. It all comes together to form a uniquely great experience for hopheads.

Corked and caged bottle on 08/15/2009. Cloudy caramel amber body with a large frothy off-white head. Big citrus and light catty hop aroma with a bit of a caramel background. Sweet catty and citrus hop flavor, some resiny notes with a bit of caramel background and a huge bitter finish. Medium full body with moderately high carbonation.

Bottle split with Dallas. Pours a dark, hazy amber body with HUGE head. The head on this billie is redonkulous. Aroma is sweet delicious hop. The flavor is hop, great flavor.

Hazy brown pour with tons of head. Hoppy nose. Very smooth taste. Almost cask like. Different type of ipa. Best "cask in a bottle" I know of.

750ml via coldbrewky. Pours a hazy deep straw color concealed by a thick cottony head...you could insulate my windows with this foam it’s so thick. Aroma is nicely balanced piney and citrus hops with sweet malt. The flavor is aggressive at first with a nice intense bitterness. Citrus, grapefruit, and pine hops with a hint of sweet malt. Bitter and smooth finish. Sticky head leaves tons of sea foam like lace stuck to the glass. Thanks steve o.

Bottle - 750mL corked and caged. Pours copper with a voluminous beige head. Aroma is big Simcoe hops, obviously, plus citrus fruits, pear, melon, floral notes and earthy hints. Taste is also big Simcoe and is bracingly bitter with a modicum of malt showing up. Light sweet malt and caramel hidden amongst citrus fruit, spicy notes, earthy hops, flowers and melon. Gets very herbal at times. Body is rather light and creamy with soft, spritzy carbonation atop and delicate bodied beer. Seems sticky at times, also. Cask in a bottle seems to fit here. The finish brings out more of the earthiness and herbal notes along with more sweet malt, caramel, citrus fruit, melon, canned pears in syrup and floral notes. Obviously, if you hate Simcoe, you’ll hate this beer. It’s bordering on one-dimensional at times but is still rather delicious.

Bottle courtesy of Firemoose15. Pours a pretty, cloudy burnt orange with a big fluffy head that falls slowly. Nose is the slightly dank, oungent, funky simcoe hops as advertised, with a bit of caramel lurking. Taste is piney, resinous hop bitterness in front, with a slightly buttery maltiness playing, , then a more woody bitterness to finish. Just a touch of pleasant yeastiness as it warms. Finish is really crisp for this level of ABV and the style, as it warms, some nice orange rind shows up here as well. Really well-balanced DIPA. Thanks a ton, Mel. This one’s a winner.

Bottle at Chris_o’s "smash Kook’s granny tasting". Alround rating: Big caramalt character, fruity simcoe lychee and orange peel character, id say perhaps over yeasty as its not very clean thought still a nice drink. I prefered the filtered going by my rating.

pours out cloudy dark gold with a tall of white lumpy head. the body is very cloudy and dark with the color of burnt oarnge. the aromas are citrus and piney with wet wood undertones. but there is a strong hop presence in the nose with a little bit of dry white wine grapes and some pine sol. it is medium to full bodied with a very nice and very strong hop kick. its beautiful the way it feels on my tongue and is a little sweet malt on the tip of my tounge with a kind of bubbly feeling all the way through. there is good lacing down the glass and the head settled to a really impressive thick cap and retained its shape very well. it finishes super dry and the aftertaste is all hops and pine. it lingers for a good while but does not make your face pucker up from being overpowering. very refreshing and enjoyable beer.

750 cork’n cage bottle. I can honestly say this is the first double IPA I’ve had out of a corked Belgian 750ml bottle. Pours an unclear hazy auburn orange with a super tall foamy sticky frothy rocky root-beer float type head 4.5. Simcoe is quickly becoming one of my favorite hops, and this beer smells like straight simcoe hops, wow, very true to the hops, wonderful, light sweet caramel complements the hops nicely, not much else to say except that it smells like fresh simcoe hops. Flavor reminds me a bit of Xenophon’s Wine, super strong piney hops with buttery toffee malt backbone, diacytel, hint of clean citrus, mostly dry piney crisp sharp mouth tingling hops, straight forward and delicious, actually most similar to Mikkeller’s Simcoe Single Hop IPA. Finishes fairly quick and cleaner than the flavor allowing some of the delicate citrus to shine through. Very very bitter long lasting aftertaste. Medium/full bodied with a somewhat lighter watery mouth-feel, big fluffy fairly soft carbonation and the body has a slight sugary chalkiness. I dig it... but only because I’ve been exposed to this flavor a few times before, Xeno’s, Mikkeller Single Hop, Mikkeller USAlive, etc... very different from the typical American double IPA.
