The apple becomes more pronounced in the flavor, but all of the elements are there. Some white wine like qualities, but with the complexity here that makes me prefer this to most whites. White Winter’s Cyser pours a crystal clear very faint golden. Still and absolutely glowing through the flute. Leaves some legs after each swirl. Good looking cyser.
Smell is straightforward but definately good. Upfront the aroma consists of slightly musty fresh apples that continue throughout but there’s floral honey on the backend.
Flavor is in stride with the aroma. Not hugely complex, pretty simple actually, but delicious. Fresh musty apples start things off and never fall away. Mid palate the floral aspect of the honey shows up before the sweetness which comes on the finish. There’s a whisper of oak on the swallow that really adds to the flavor. This is a good cyser.
Light body with a somewhat dry finish leaving just a touch of residual sugar. Although the body dries you out this is a quenching and satisfying cyser.
The drinkability is good for sure. There’s zero hint of alcohol and it goes down far too easily for the abv. I could see myself getting in trouble with this.
My second offering from White Winter and they were both very satisfying. Although I’m having this before dinner this would be a great after dinner mead. Pick it up if you get the chance.
11/22/07 Cornfield (4892), Oak Forest, Illinois, USA Jun 17, 2007 My first Cyser. The aroma from this clear bodied pale yellow drink is that of waxed apple skins, grasses, and honey. The actual fruit becomes more recognizable in ths flavor. The apple is slightly tart, the grassiness becomes more herbal, the honey becomes more pronounced, and the alcohol makes itself known. The finish is semi-dry and lightly metallic. Interesting.
