Clear, pale yellow. Strong honey aroma, slightly tart and nicely herbal, almost grassy comprising a strong applesauce component. Tart and very sweet at the same time which make it overall enjoyable. It evolves rapidly into a very skinny bitterness (pear skin?). Very sweet, medium oily palate, alcoholic and pleasant.

My first Cyser. The aroma from this clear bodied pale yellow drink is that of waxed apple skins, grasses, and honey. The actual fruit becomes more recognizable in ths flavor. The apple is slightly tart, the grassiness becomes more herbal, the honey becomes more pronounced, and the alcohol makes itself known. The finish is semi-dry and lightly metallic. Interesting.

Light golden color. Apple, mild baking spice and honey comb aromas. Apples and a dry mold hint in the flavor. An interesting cyser. But somehow the apple skins seem to be in there.

Light yellow mead. Nice apple and honey aroma, with perfumey incense. Sweet mead with more pear notes in mouth, smooth, with some alcohol showing in finale. Sampled in May 2005.

750 ml bottle shared with Capflu, Goldorak, beerbuzzmontreal, Boutip and DumDum at the Ciderwinder tasting in Ottawa. Bit of legs on this very light blonde, still oily glass...honey, alcohol, wood and a touch of peppery sharpness in the nose...sharp flavor of honey, vanilla and charred oak, muted sweet apple...mellow but strong finish.

Thick full apple aroma is mostly sweet with some lightly browning character and plenty of musky honey. Clear pale body with no legs on the glass. Musky, sweet honey flavour has plenty of floral character. Medium body is quite sticky. Bottle.

During May ’07 brewpub tour, stopped at the winery in Iron River, WI. Pours a light clear, green apple wine with some light green highlights. Aroma has scents of earthy herbs, grass, some sour apple and a touch of honey. Taste is light sour apples, pears, and honey with a touch of pepper. Finish is semi-sweet and floral/apple aftertaste.
