Pours dark mahogany with a thick tan head. The aroma has alcohol, apples, sweetness, maple syrup, brown sugar and roasted toffee - very smooth. Medium / thick body with lots of sharp carbonation. The taste starts with roasted sweet malt, brown sugar, cotton candy, honey and oak. The finish has abv heat and mor oak presence. An interesting drink, but not one I need to revisit.

12 oz bottle. Poured a clear reddish brown color. Head was bubbly and off white with good retention. Smelled of light chocolate with a hint of tape adhesive. There was also an occasional whiff of dry dog food. Very sweet on the tongue and very effervescent. Alcohol, honey, burnt caramel, subdued apple, and cotton candy flavors. I didn’t really detect any oak. Very complex, but I’m not a big fan.

Bottle sampled on 8/5/06: Mostly still, viscous dark copper appearance has a thin, wispy-lacing coating of off-white head. Has a nice, complex sweet aged malt and dark honey aroma with some dark fruity notes. Starts with a sweet complex dark caramel and oaky fruity body with some warming alcohol toward the finish. A very enjoyable, complex mead.

Interesting drink. It pours a clear, deep brownish amber with a creamt light tan head. Kind of smells like a fruit liquer, sweet with honey and dark fruits, woody with a touch of ash. The flavor is dark pulpy fruits blended with honey and oak. Not bad. Odd, but with "only" a 10% ABV, it seems to warm almost instantly.

Bottled, no date. Also mine claims 12% ABV, not the 10% as listed. My first mead. Pours a clear red with a slight orange tinge with a very thin film of beige atop. First aromas are ETOH and oak, then sweet maple or honey--I can’t tell which. I also get some granny smith apples and raisins. Flavor is very sweet and has some light peppery qualities in addition to the aforementioned aromas. Some chalk in the finish. Quite boozy. Full bodied, slick with the smallest amount of carbonation you could imagine. Not horrible, but I doubt I’ll drink the whole bottle--or ever again.

Bottle acquired in trade with The_Enemy (thanks!). Poured a deep amber color with a small sized off white head. Some larger particles. Aromas of honey, oak, and some dark fruits. Tastes of stronger honey and oak. I didn’t get the Oxidization that Eric did (I think he planted it in Tom’s brain). Eric’s new name is Mr. Oxidization...

Thanks to hopdog. Pours a cloudy brown amber with a smaller bubbly off white head. Aroma of fruits, some vanilla, oak, honey and some oxidation setting in. Flavor of yeast, honey, malt and osme light hops that were kind of hidden.
