Light pink, nearly transparent with faint but slow-dissolving legs.....sweet ripe nose with undercurrents of acid tartness, mostly fruity with little hint of honey/floral character....initially, perhaps only momentarily quite sweet and berry-full, quickly morphing towards a very sour, tart finish, almost mouthpuckering even....wow, this was a stunner, probably the tartest and most "hard" mead I’ve had. Pours a pale earthy red color with pink highlights in the glass. Aroma of sweet raspberries, a touch of honey, and a hint of mellon. Taste is mostly fresh picked raspberries, a little syrupy, with a sweet honey aftertaste. Finish is sweet and more berries. Bring on the dark chocolate with this mead!
