Taste is of malt, cherry, caramel, alcohol, chocolate, oak and some hops. Slightly tart with a minor bitter and alcohol aftertaste. The aroma is similar, but more alcohol comes through. It seems to be a fruit that many brewers try to play with but most of the time they just get it wrong and dominate an often overly simple beer with cherry flavor. This one got it right! The dopplebock is done very nicely with rich full body and sweet tongue, with just enough coffee/chocolate flavor to give it a nice roasted background, and the cherry flavor is very subtle and tasted on the back end. Light lacing. Aroma is dark esters, cherries, and faint oak. Flavor is toasted malt, dark esters, and a tad bit of herbal hops. The esters linger in the finish. Medium body. Aroma of roasted malt, chocolate, caramel, cherries and slight oak. Taste of cherries, sweetness, oak, and slight alcohol. This medium bodied brew hides the ABV very well and is pretty well balanced. Pours clear, effervescent tawny with a smallish fizzy light tan head, somewhat lasting with fair lacing. Aroma is heavy malt (caramel, nutty), light earthy hops, light bread-like yeast with notes of candied cherries, toasted oak, and alcohol (solvent-like). Some off aromas of stomach acid (butyric) indicating sanitation issues. Flavor is fairly sweet caramel malt with bitter hops and slight cherry notes. Again, the stomach acid is in the flavor too. Some oak notes at the end. Creamy start with a spicy and dry finish; a tad too attenuated.
