Commercial Description:
A dry traditional mead similar to a Riesling Fleur de Blanc, a semi dry style mead with floral honey tones and a crisp fruity flavor. Served chilled, this engaging wine is perfect on its own or with fish, chicken and light cheeses. This mead is made from the nectar of wildflowers collected by honey bees from the prairies of the Midwest.

bottle at Ft Wayne tasting - Pours pale yellow with maybe a slight haze. It has a light floral honey aroma. The taste is semi-sweet honey. It’s a light, easy drinking, enjoyable mead.

Bottle shared by thedm and hotstuff. Very pale yellow color and still. Floral honey nose. This is a semi-dry with crisp, floral honey taste, light alcohol and a nice, dry finish. Pretty standard mead but tastey. I’ll need to try more bottles from this place.

I had this right after their blueberry and wasn’t nearly as impressed after loving the blueberry... maybe should try again alone.

Bottle enjoyed in the Clark Street Ale House in Chicago. Pours a clear color, with a tinge of yellow, looks like water almost, no head. The nose was very sweet honey and some flowers. The taste was initially so smooth it was like water, really if you chugged this it would go down very easy. Taste is sweet honey, sunflowers, some syrup and overall an easygoing drink. My first Mead!

Sampled at West Lakeview Liquors, Chicago Wild Blossom tasting. Clear, slightly yellow. Alc aroma with honey, white wine. Green apple, alc flavor, honey, some grainy, medium sweet. A little syrupy, light to medium body. Nice tasting, warming mead.

Interesting look, a very pale yellow with miniscule bubbles that remain in suspension with no movement whatsoever. The aroma is like a floral bouquet with some honey sweetness seeping through. In flavor it’s like a mildly sweet white wine with a hint of tart apples and some subtle nuttiness. The finish is quite dry with a low alcohol burn. Not bad.

Sampled at my neighborhood "meadery". Intense floral aroma with a base of sweet honey. Surprisingly dry after the sweet nose. Very floral and fruity flavor, with a strong apple component. Alcohol pretty prominent as well. Don’t know anything about meads, but this is far closer to a wine than a beer, and certainly nothing like the sweet/sour, frothy concoction that I imagined prehistoric Britons downing after pillaging their neighbor’s village.

187 ml bottle into wine glass, Clark Street Ale House , Chicago IL. I was stunned to see a local meadery in Chicago. I was stoked. I wholeheartedly support this place. Unfortunately, the only other meads I’ve had were both uber-dope (Jadwiga and Sweet Melissa), so this one paled in comparison. Pale golden yellow in the glass with a little clump of thin bubbles on top and off to the side. Honey and potpourri in the smell. Light bodied in the mouth for a 12% beverage, the flavor was floral and sweet. The finish wasn’t as dry as I expected, and was actually watery and acidic. A lady friend in the bar said that it was like apple juice, and I have to agree with her. Still, way to go to this little Chicago meadery. Keep it up.
