From the condition of the label and cap, and the time I’ve seen this on the shelf, and more importantly, the flavor, I’d pin this at somewhere around 2 years of age, perhaps a bit less. The carbonation has begun to recede, and the head, while lasting and lacing, is not as full and fluffy as it must have been when fresh; which is understandable. Anyways, it still has respectable retention, and the bottom of the bottle is just completely covered with dark sediment. Fine bubbles rise from the bottom of the glass when poured, with bits of sediment floaties. The beer is very hazy, obviously, and an amber-copper color, with straw-yellow colors on the edges. The head is white. Aroma smells of fluffy white bread with warm honey on it, quite doughy and yeasty. Light spice notes of pepper and with some definite fruit esters. Full and malty, the aroma promises good things. Flavor does begin with a good malt base, sweet bread and dough, light bits of yellow fruits (lemons and oranges), some red apples and then a good amount of bitterness, dry and not terribly flavorful for hops. I get a little bit of powdery sugar, unfortunately, which I can’t stand, adding a slightly artificial sweetness and powdery texture. Slightly fizzy mouthfeel, but after breathing, these issues are not as pronounced. Honey and graham crackers, dry grains, dry peppery hops bitterness. Finishes lightly sweet, with chewy yeast and moderate bitterness. Some metallic notes from the old yeast sitting at the bottom. I don’t find near as much tartness as everyone else. omnivore (270), San Francisco, California, USA

| 3.6 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 3/5 | 7/10 | 3/5 | 15/20 | Jun 5, 2005 (Bottle 33 cl) Comes as "Witkap Pater Stimulo". Pale, cloudy golden with a neat, white head. Lovely flowery nose, and is that some wheaty, fruity esters I detect in there? Actually I do get a witbier-feel about this - could be the spicing. But this is fresh and quenching, and a very atypical abbey ale. 210697 TBone (6868), Pori, Finland

Hazy yellow, small white head. Aroma has honey and lemon (dish cleanser). Taste starts sour, has fruitness but watery body doesn’t carry this beer longer. For 6% brew you could expect more. bb (2941), Martinez, California, USA
