Commercial Description:
Golden colored, but cloudy with yeast, with a light, frothy head.

In the bottle. Pours a cloudy rich golden color. Big fluffy white head. Mighty pretty beer. Lemony bubble gum smelling head. I don’t get a bolus of ester, but its there. Body is solid for a single abbey, but not overly dense. It still makes the top of my ears burn! Delightful rings of lace emerge as I drink it down in my Elysian Brewing Company lambic glass. As it warms, it just stays tart- no magnificent mutations as one sees with the big dog Belgians (say, like Delerium Tremens). A good beer to capture yeast on brewing night, as there was a real cake in the bottom of my bottle.

Very hazy yellow, with interesting yeast bits floating about, nice white head lasts a long time. Aroma primarily of lemon. Bready notes move into lemon, and then a medicinal herbal finish. Like someone splashed a shot of Jaeger into a wit beer. Nicely done, but the medicinal note isn’t my bag.

Looks like a wit, very light yellow, cloudy, very long lasting thin white head which left nice lacing. Yeasty aroma, some light citrus, a touch of malt. Yeasty banana flavor, acidic, and a little wheaty almost. Mouthfeel was smooth and creamy, yet acidic at the same time. Quite enjoyable, very drinkable.

Clear amber color and a stocky white head. Nose is alive with citrus, spice, and sugar, with notes of other fruits, peach, apricot, coming in from behind. Largely lemony, though. Smooth, clean palate, with a citric hop bite afterwards. Light body, some graininess in texture, and very, very yeasty. Liquid bread, almost, but that is the point, isn’t it? To give the abbots their daily bread in a mug, during fasting times? Some sourness appears in the end, but doesn’t destroy the enjoyment of this tasty brew.

33cl bottle, no BBD date found. Hazy straw color, white head. Fruity lemon/banana aroma. Aromatic. Lightly malty, good hop spice in the finish. Slight metallic flavor that adds a nuance rather than detracts. Finishes lingering orange. Light bodied beer, yet brimming with subtlties.

Has a banana/clove/yeast aroma that is strikingly similar to the Paulaner Hefeweizen. The flavor of this beer does not due the aroma justice. It was a magnificent hazy straw color with a white head. The taste was very smooth with just the slightest tart lemon flavor. The yeast taste was not pronounced but noticable in the mid of this one. A little to watery for my tastes, and the aroma set the stage so that I was dissapointed by the taste.

Bottle: Excellent aroma. Very fruity. Pours a hazy yellowish-orange with a nice big white head with good retention. Excellent lacing. Flavor is mostly citrus, spicey and some fruit. Not as malty or as fruity as I expected based on the aroma. Slight bitterness in the finish. Very dry.

Very clear, very slightly amber golden, lotsa lace. Nose soft with a floral, baby powder kinda thing going on and maybe a bit of coriander. Very mild, light and fluffy, slightly watery. Only the faintest touch of bitterness in the finish. Refreshing but it’s lacking a little flavor.
