6% abv. It is fermented at 68 degrees, then cold
conditioned at a chilly 41 degrees. After
conditioning, it is primed with white candy sugar,
then re-yeasted and re-fermented in the bottle, where
it is stored at 75-79 degrees. This makes for a very
complex and refreshing brew for a beer of its
strength. Witkap-Pater Single is brewed with Pilaster,
and a specialty malt the brewery keeps secret, and is
hopped with whole flower Styrian Golding hops.
Witkap-Pater Single pours to a hazy golden color with
a dense, tall rocky head of foam, and a lively
carbonation. The nose on this beer has a spicy hop
aroma and a vinous like undertone as well. The body on
this beer is crisp and refreshing, with lots of
estery, fruity flavors of green apple and citrus.
There is also a back drop of dare I say "yeasty"
flavor on the palate as well. Michael Jackson
says this beer is "sherbety" on the tongue, and I
would say that is an apt descriptor. This beer
finishes with more fruity notes, of apple and citrus,
and ends with a dry, zesty bitterness that lingers. To specify, lets say the best beer to drink easily at a terras with a little sunshine. Pure white foam over a light golden brew. Balanced, clean and a bit of pepper in the finish. Very light and drinkable. Hints of dust. Great feel except for a perfect snap. Smells like Bazooka bubble gum and bananas with a little pine resin. Huge carbonation, light in the mouth with pepper, banana, clove...zesty as heck! Definately one of the most uniqe smelling and tasting beers I’ve had. Absolutely delicious and one of my new "must-have-it-in-the-house-at-all times" beers! I forsee a trip to John’s Grocery in my very near future...
