Aroma of lemons, flowers, and cloves, very appealing. Hits the mouth with a thin body, ever so slight hops on the start, malt and spices (detected coriander with lemon zest) on the middle and finish, which is dry. Aroma of coriander seed, wheat, hay, grass, flowers, hummus and some light hops. Full-bodied; Strong sweetness throughout with honey and malt the most noticeable. Aftertaste is very mellow and the flavour lasts and lasts. Overall, a good tripel - missing some complexities of other belgiques, but a good one overall. I first tasted strong mineral banana bread flavors, the next sip had a candy sweetness with spiced apples and lemons. The flavors kept surprising and mixing. Created a fat fluffy pillow of a head but it would eventually simmer down flat. The beer itself was a glowing yellow with some light haze occurring. In the nose, I find a soft delicate European style of hops and the faintest background of grain. The flavor is soapy and has minor notes of white bread and overall is quite chewy to ponder about.
