Commercial Description: 20% Ida Red, 18% Golden Delicious, 18% Fuji, 17% Jona Gold, 10% Empire, 8.5% Gold Rush, 8.5% Breaburn. Grown by the Halseys of White Cap Farm, the fresh pressed apple juice came from the above blend of apples of which each contributes a distict character. After pressing the apples on the 3rd of January 2007 at the White Cap farm in Bridgehampton, the juice was brought to the winery to start cold settling for 5 days. The juice got carefully racked and inoculated with the wine yeast Cote de Blanc to start the fermentation. The fermentation was done at a very cool temperature of 62 degrees and was stopped after 15 days to preserve some of the natural sugar by chilling the wine and by racking it of the yeast. Bottling was done on the 22nd of February resulting in 563 cases.
