Commercial Description:
Danish: Xbeeriment Den Sure Kanon er en ravfarvet øl, der indledningsvist er gæret med en blanding af primært “almindelig gær” (saccharomyces), mælkesyrebakterier (lactobacillus) og vildgær (brettanomyces). Efter at have færdiggjort ca. 75% af gæringen blev der tilsat en kraftig mængde brettanomyces til at gøre arbejdet færdigt. Brettanomyces arbejder meget langsomt (men effektivt), og gæringen har derfor fået lov til at tage mere end 2 måneder. Herefter blev øllet tappet på flaske til eftergæring og lagret i yderligere 2 måneder. Brettanomyces spiller en stor rolle i øllets aroma, der er fyldt med tropiske frugter som melon, ananas og fersken, blandet med noter af frisk brød, honning og citrus. I munden er øllet tørt og med et syrligt snert til afslutning.

English: A pale ale fermented with a mixture of "ordinary" beer yeast (saccharomyces), lactobacillus and brettanomyces. With about 75% of the fermentation complete, a boatload of fresh brettanomyces was added and left to finish the fermentation. The beer took more than 2 months to finish fermentation. Afterwards it was bottle conditioned for another 2 months. As the beer contains massive amounts of brettanomyces it’ll keep evolving slowly in the bottle for several years.

Bottle from HomerSlottved (thanks!). Pours copper with quickly dissipating white head. Aroma of red wine grapes and oak. Taste has more grapes, but this time more like Concord. A good deal of acetic acid and sour funk. Pretty good I say...except for the finish. There’s some weird chalkiness and who knows what else...all I know is that I don’t like it. It only happens like after every other sip though, so I’m confused. After all of that, I still think this is a solid effort.

Bottled. Amber coloured. Unclear. Dense beige head. Aroma is sour, citric and has some vinegar. Flavour is sour, has some vinegar and grape. A fruity note as well. Medium to full bodied. Ends on a sour grapish fruityness. Very nice brew. thx to papsoe for providing this.

( 33cl bottle thanks to bu11zeye) Pours cloudy dark orange with decent lacing. Nose of wet wood, sour fruits, funky and complex. Taste is very tart like a smartie, puckering, a little too tart on the finish, and a very funky smell the warmer this one gets.

Courtesy ChzMan. Muddy copper. A bit of off white carbonation. Dirty. Almost too dirty (earth, barn, petting zoo) in the nose- also some sweetness, old wood, and plenty of sourness. Same flavors, with a bit of acetic sourness balancing the funk. Medium body, balanced carbonation.

Courtesy of bu11zeye. Hazy amber with a thin head. Lemon pledge aroma with some earthy barnyard. Sweet n’ tart flavors of light pit fruits lemon barnyard caramel decent enough.

Bottle thanks to bu11zeye. Hazy orange pour. Large particles. Aroma is sour, bleu cheese, and a hint of gym/feet. Flavor is sour, attic dust, oak and wood. Great mouthfeel.

Bottle from bu11zeye. Really clouded pour. Smells very off, like rotten grains or hay. Sour and citrus flavor that leaves an unpleasant tinge under the tongue. Watery feel and aftertaste.

Bottled. Pours a murky brown with all sorts of disgusting protein and yeast floating around in it, one I just tried to fish out because I swore it was a chunk of food or something but when I got it out, sure enough, it was just yeast. Yuck.

This beer is yeasty, sour in aroma, with a burning drain cleaner note in there. I didn’t notice this when I was playing Wii Sports Resort and drinking this. All I noticed was that after 18 holes of frisbee golf the beer was almost completely gone, so in that sense this was wonderful. (aside: just tried to fish out another protein again that I thought was a fruit seed. I think I’m losing my mind). The flavor is a stark, white vinegar, a barren desert with an oasis in the distance containing a tree growing a variety of perfectly ripe tropical fruits. Lovely.

( 33cl bottle ) Pours a cloudy amber body with a small white head. Aroma of horseblanket, dried cow manure, and grass. Flavor of brett, berries, light vinous, and herbs.
