Hop resin components are commonly divided into two acid categories - alpha acids and beta acids. Alpha acids have two important functions in beer making. First, they typically provide most or all of the beer’s bittering principle. Second, they provide a weak antibiotic effect that allows brewing yeast to thrive in an environment not wholly free of bacterial competitors.
