Kräusening

Kräusening is a traditional German method of carbonating beer, most often lager beers. The process consists of adding fresh wort containing unfermented malt sugars to beer before bottling. Kräusening helps overcome the problem of yeast going dormant during the lagering phase of fermentation. It also helps the flavor of the beer by reducing levels of diacetyl, acetaldehyde, and has a drying effect overall.
