Yeasts are single-celled, nucleus-containing (Eukaryotic) organisms in the fungi family which in beer making are responsible for fermenting sugars into carbon dioxide and alcohol. Saccharomyces cerevisiae is the species of yeast most often used to make beer, wine and bread.
