Help with an IIPA

want to make an IIPA. I plan on using the malt in the recipe for the Pliny Clone on the site (unless someone has a better suggestion):

13 pounds 2 row
1 pound corn sugar
1 pound Carapils
1/3 pound or so of Crystal 40L

I have the following hops, and wanted some opinions on amounts and schedules. I’m pretty new to more extreme brewing, and to recipe formulation, so I’m looking for help.

Amarillo - 2oz - 9.9% AA
Chinook - 2oz - 11.4% AA
Centennial - 3oz - 7.5% AA
Cascade - 6oz - 7.2% AA
Simcoe - 3oz - 12.2% AA
Columbus - 6oz - 14.2% AA

I would cut the carapils in half and double the sugar, but that’s just me.

2 oz. Chinook and 2 oz. Columbus to bitter

1 oz. each of Simcoe, Columbus, Cascade, and Centennial at 2 minutes, flame out, and dry hop.

There’s your "Pound o’ Hops DIPA"

I would leave the grain bill as is, but as absolutesites said, that’s just me.

I would go with his hop suggestions if you are looking to use all of the hops. If you are not looking to use them all, remove a bit from the late kettle additions, not the dry-hop.

I might be wrong but wouldn’t only hopping at the very end like absolutesites said produce a lot of aroma but not a lot of flavor? I would think you need some additions in the last 20 min.

I think that I’ve read a lot of debate on this. Anyone care to elaborate?

First Wort Hop with 2oz each of Columbus & Chinook, then I’d mix the rest of the hops in a bag and weigh them out and do even split between 15min, 5min & KO & Dry Hop. That’ll get you pretty nice IIPA, imho.thumbs up 11/3/2009 12:50:54 PM

Since hop oils = BOTH flavor AND aroma and are volitized within 5 minutes of boiling, why add them at any more than 5 minutes?

FWIW, I add ALL my flavor and aroma hops at 0 minutes.
