’ve been doing my high gravity Pliny clone, and it’s been in the primary for going on it’s 13th day.

Should I have pulled it after 7 days?

I swear Northern Brewer says 2 weeks primary, 2 weeks secondary and 2 weeks in the bottle.

Help!!

Thanks,
Dan

You’re fine. Secondary is just to help with clarification. Keeping it on the cake for 4 weeks and you’d still be fine... RDWHAHB

Keep it it the primary until fermentation is done and then wait a couple more days. Transfer to the secondary (with dry hops) for 5-7 days and then bottle with 2-2.5 volumes of C02 or appropriate amount of corn sugar. It will be good after 2 weeks in the bottle but much better at 4 weeks.

thumbs up

Awesome, thanks.

Do you guys throw your pelets in, or do you sack them up?

I use a Better Bottle and sack mine up with a "loop" to catch under the spigot (keeps them in suspension). When I used a normal carboy I used to bag them with a couple marbles inside to keep them on the bottom. Keeping them closer to the bottom extracts more hoppy aroma IMHO.

I’ve never had a problem with leaving beer in the primary "too long." If you taste a sample of your beer and it seems to have a buttery/butterscotch taste or a slick feel you’re probably rushing the process and haven’t left time for a diacetyl rest. Unless you’re brewing a beer where some level of diacetyl is expected. 10/30/2009 4:19:20 PM

Last week I bottled an all grain PtE clone. (I think I messaged you about the extract kit, but I saw the all grain recipe and decided to try it out). It called for the first dry hop addition which lasted 12-14 days and a second dry hop that lasted 5 days. I used all pellets and they all settled out in the secondary. Now just waiting for it to carbonate. Seemed pretty good when I tried it during bottling. 10/30/2009 6:25:12 PM

More Beer was telling me 1 week in the primary 1 week in the secondary and 2 weeks in the bottle. Jive talk I say.

Anyway, I have my fermenter in my bedroom with a blow off hose going to a tupperware pitcher. To get to sleep, I count the seconds in between GLUGS. I’m almost at 60 seconds between GLUGS. So that means I’m not quite done yet in the primary eh?

As for the dry hopping I want the most bang for my buck, so would I by anything by putting the pellets in the secondary before racking to it?

In my experience, the hops become nucleation points for the CO2 to come out of solution and cause the beer to fizz. I just chuck them in after racking and it seems to work pretty well.thumbs up
