  ’m looking to do something tasty at 1-2% alcohol. I want it to be hoppy but some balance is nice. My understanding is that using unfermentables is a way to get some non hop flavor in there, how does this work? What are some unfermentables? Unmalted Barley/wheat? Lactose sugar? Anything else?
Does anyone have a recipe for this sort of thing?

Sorry, perhaps I should have worded it this way. I’m looking to do something as tasty as possible at 1-2% alcohol.
Folks seem to be liking Thisn’ here pretty well... I’m thinking of something along those lines.

Crystal/caramel malts + warmer than usual mash + short mash = unfermentables.

And don’t disencouraged by silly knee jerk reactions. Brewing tasty low alcohol is one of the funniest and most challenging quests as a homebrewer. The only thing more difficult is probably to clone a Bud Lite with equal lack of flavours, but that’s much less rewarding.
For my family’s traditional Christmas party, most people are driving home, but the designated drivers still want to taste my homebrew. So I try to make the most flavourful 2% amber ale, with a big, sweet malt profile, an hops to balance. And then a kick-ass 10% Belgian dark, to impress :)

Did Dennetta request this for after Brewfest so you have something to drink other than single malt scotchs as you intermittently dose your kitchen sink with the remnants of that delicious pasta we made?

A few thoughts...
Mash high... use high quality base malt..
I would go heavy on the late additions and minimal on the bitter charge. Also might not hurt to consider a hop with low cohum. for your IBUs....
Maybe try some flaked barley to round it out a bit?

ChristianScheffel already gave a good reason. A family gathering where people are driving. I’m sure there are countless other potential reasons, but if nothing else, it would be a good challenge, and pretty cool if he could make something that tasted great.
