I had this (apparently) small-batch cheese from WI last night, just a small sample. My wife and I were BLOWN away.
A little web research indicates it was or is available at Whole Foods.
Also, cheese descriptions flip me out. Anyone who says this cheese is smooth or subtle in any way should be shot. This is a full-out assault blue, not merely salty, but full of all sorts of great, earthy flavors. Most interestingly to me and the wife was the palate - this cheese was positively granular; you could feel the rawness, the aliveness of the cheese. As I said, I was totally blown away. I haven’t seen an on-line source, but my credit card is ready.
I would have liked a really sweet beer accompaniment - maybe one of the better bourbon-barrel aged stouts or barleywines. Last night with our cheese plate we vacillated between Lagavulin and a nice French red wine blend.

Another great Blue if you can find it is anything from St. James Minnesota. They have a system of caves there and they age the cheese in them, awesome with some roasted pine nuts and wild honey.

It is made by Roth Kase, which is actually a large cheese maker. This should have pretty widespread distribution, but Roth Kase typically focuses on the food service market rather than retail. I have access to the Roth Kase line, shall I see what it runs per pound? Cheese for beer trade perhaps?

I checked the Ron kase website and its not listed, but plenty of other good looking cheese there.

I just picked up a small 1/4 Pound chunk of this at the Whole Foods in Chandler AZ today.
$13 a pound.
Can’t wait to try it. :)
