Silky is correct, French cooking is about technique, but if you are reasonably comfortable in the kitchen, it is not that difficult to pick up the basics. Any particular region or style you are interested in?

Very least buy "Joy of Cooking" .

Know what else is funny, so few people buy a decent saucepan and then learn how to control stove heat.

So many people think stoves have just ON and OFF heat settings. Don’t have time! Must boil everything! Must cook this quickly as possible! This destroys flavor, nutrition, and the valuable knowledge of how different heats affect the result.

Agreed. I have taught myself to do a lot of things, one of which is cooking at a pretty advanced level. Good luck!
