aged beer at 67-68 F? I’m pretty sure that my fridge is too cold to properly develop a beer at 40-45 F. I guess my question is should I leave my beer in the fridge or in the depths of my basement?

You’re better off at the fridge temp. They may age more slowly, but you’ll have more control over their development.

It will definitely age faster at Farenheit temperatures than at Celsius ones.

So store your beer with me in Canada.

Your basement is good. A couple clicks cooler might be ideal, but that’ll work.

If that’s the fridge you keep your food in, 40-45 F is too warm to inhibit bacterial growth.

I’d just try to raise the temp a bit then and do like Beer Cellar said. You’re better off with more patience and a cooler, consistent temp.

Any idea how to raise the temp (the gage is on the lowest setting without being off). I have heard of people cellaring their brews in a dormant fridge - i.e. one that is turned off. But wouldn’t it eventually settle to the temperature of the room it is in?

A Ranco controller is your best bet. But just try to find one already adapted with power cables - it’s a real pain in the ass to do yourself.
