Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

[330ml bottle from brewery’s own stand at the Good Food Show 2009, NEC, Birmingham] Black with purple hints and a large tan head. Moderate carbonation. Attractive port, blackcurrant, leaf mulch and wood smoke aroma, but on tasting the beer is rather thin and watery. Hints of smoke, but a lot of unpleasantly sour bitterness in the finish. Very disappointing.

Dark nut-brown color with ruby highlight, reminescent of porters. Tiny tan head. Sweetish, roasted scent of dark malts, cocoa powder, and dark berries. Smooth creamy textured ale with distinct roasted malt profile with light elderberry and other slightly tannic fruity notes. Rather chocolate like roastiness than coffeish. Low hop level, easy, smooth body, lingering roasted cocoa bean feel.

Bottle. Poured black with a quickly dissipating brown head. Aroma had some sour berry notes as well as undertones of roasted malts and oat. Flavor was more malty with clear roasted notes. There was still an undertone of berry but much less present.

Egész sötét vöröses feketés színe van,amit egy vékony könnyű hab lep be.Illata kissé kakaóporos és gyógyfüves.Íze is olyan mint egy gyógyfőzetnek amibe kevertek egy kis keserű csokoládét és fekete bodzát ízesítőnek.Szinte látom magam előtt az öreg vajákost ahogy keveri a csodaszert búbánat ellen.Közepes teste van és alig van benne buborék.Utóíze száraz és fekete tealeveles,étvágygerjesztő és hosszan tartó.Különleges és kellemes ital.

Pours dark brown amber with a thin tan head. Aroma is spicy and a little funky kind of antiseptic even. Taste is sweet berry, cocoa, and alcohol with a thin body.

(bottle) Almost black coloured hue with a brown and short foamy head. Moderately sweet roast-malty aroma with caramel, berry-fruity (cassis) and spicy notes. Moderately sweet flavour with a tinge of bitterness, medium bodied with a smooth carbonation. Roast-malty base with notes of caramel, chocolate, leather and subtle berry-fruity notes; moderately dry and bitter finish with roasted malty, spicy hoppy and warming alcoholic notes. Likeable brew. 29.XI.09

Pretty strong roasted aroma with a slight fruity aroma (the elderberry I guess?). Poured a pitch black with a mall off white head that left little lacing. Good roasted malt flavor along with some chocolate, and dark fruit. Mouthfeel was pretty thin. Another unique and tasty beer from this brewery.
