Commercial Description:
Um das Thema "Granit" im Bier noch mehr zu verankern, beschlossen wir 2008 erstmals ein GRANIT BOCKBIER einzubrauen, das in alten Granitsteintrögen vergoren wird. Perfekte Vorraussetzungen für ein solches Bier, bietet das Sudhaus aus dem Jahre 1929. Während der Hauptgärung in alten Granitbottichen hat das Gestein Zeit seine Geschichte an das Bier weiter zu geben. Um auf Temperatur zu kommen starten wir diesen Prozeß mit glühenden Granitzwecken. Die Steine werden über offenem Feuer erhitzt und kühlen dann schlagartig in der Würze ab. Die Bierinhaltstoffe karamellisieren und die Hefe erhält optimale Gärbedingungen. Zusätzlich wird die Hefe ganz klassisch "aufgezogen" d. h. von Kübel zu Kübel geschüttet um diese zu belüften. Dank der offenen Gärbottiche können wir die Kräusendecke abschöpfen und somit unedle Hopfenbitterstoffe entfernen. Daraus resultiert ein dunkler Bocktyp mit schönen Karamell- und Röstaromen und einem wunderbaren Hopfenbuket. Nach ausreichender Lagerung in den alten Gewölbe-kellern, ziehen wir den Bock bereits im Juli auf die Flasche, damit bis Weihnachten eine Nachreifung stattfinden kann.

Bottled. Dark brown pour, foamed up, but the tan head faded very fast. Malt nose. Malty, sweet caramel, biscuity flavor. Rather thin mouthfeel.

Sampled on 11/13/2009. This bock pours a medium brown color from a 50cl swing-top bottle. Medium sized, quickly dissipating, white foamy head. The aroma is bready and caramel, slightly sweet. A medium bodied bock. The malts are caramel, bready and sweet. The hops are earthy. Lively carbonation. A smooth tasting, fairly sweet bock. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet.

Pours a slightly hazy deep cola/garnett color with a decent light brown head. Aroma is raisins, prunes and wine. Taste is rich sweet roasted malt, dried dark fruit and molasses. Some alcohol warmth at the finish. Very good doppelbock.

Pours a transparent dark copper mahogany with a thin coating of off-white head. Aroma of rich sweet dark caramel and some raisins with an underlying bready yeastiness. Starts with good malty fullness and dark caramel sugars with a light noble hop balance and complex fruity notes before a semi-sweet chewy doughy finish. More of a doppelbock than a dunkler bock and pretty enjoyable.

Nice malty aroma and flavor. Very little carbonation in the bottle I got. Some smokiness, but the palate is slightly watery. One can also taste/smell the alcohol at times. A very good and worthwhile beer all in all.

Bottle. Pours with a large tan head, slightly hazed brown body.brown sugar and dark malt aroma. Tar, chocolate, toffee. Taste is not so nice, soy, soggy, wet malt and chocolate malt. Smooth mouth, light bubbles.

Appearance: light haze on brown with hint of garnet. Lighter pleasantly contrasting fine top. 3+
Nose: malty nose with light hint of prunes, Italian plum and alcohol. Fairly traditional. 7-
Flavor/Palate : medium bodied with softer walls. Brown malt with hint of hazelnut , caramel and woody bitterness. Fairly smooth palate. Low carbonation. Late top end burn. One of mellower dark bocks. Very well presented . Perhaps bit unfinished feel yet this one can show its good side very well.
