| 3.2 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 4/5 | 6/10 | 3/5 | 13/20 | Dec 11, 2009 very loud pop when i corked. pours out honey gold with a tall frothy white head that settled to a lumpy setting. the body is a hazy oarnge with a lot bubbles rising up in the center of the glass. the aromas are pungent and very yeasty. there is also some citrus, and skunk. wow, this is definatley new to me. i sipped it, and was amazed at how dry this beer finished. sour to the palate, but no where as near as bad this one sour i had but i will not mention it. not sweet, now bitter, weird in flavor for me and not bad, but definaley a session beer. i cant do this everynight, and i dont think i can pair it with food other then some sour cheese. very interesting and will try some others in the future. Aroma is sour apple, vinegar, and white grapes. Sour peach and apple with bitter lemon peel and wild yeast finishing dry and very tart. Aroma is horsey and citric with some rather nice funk and cheese notes. Flavour is clean, way too clean and straight forward. Mildly acidic with notes of lemon, lightly bretty but overall very clean with very little barnyard funk. Orange color, slightly golden hues. Big white (with a yellow shade), airy and sparkling head that settled after a while and leaves some lacings.
A very sharp acidic note hits the nose at the first breath, but this is leveled out even at the second breath. Tartness dominate. Plenty of yeast, overripe apples, some mild funky notes (wet straw). A champagne-like smell, good but a little to restrained. Would have wanted a little more.
In the mouth, I pick up ripe apples, green-skinned grapes, lemon peel (think white wine), earth and straw. Wheat is also present and is reminiscent of bread crumbs. Plenty of yeast as well. All in all, a very tart taste, almost sour. It’s very vinous and sometimes reminiscent of champagne or dry cider. Some funky notes as well, but a bit paradoxically I think the beer is rather refreshing as well. The finish is rather dry and contains more overripe fruit, some barrel-character, fruit pits, some gentle minerals and, a bit surprising, even a mild bitterness. Very pleasant and very tasty.
Light body, plenty of sharp and lively bubbles. A bit crisp. Very champagne-like.
A really good beer. Drinks like a fine wine. But perhaps it is a little to restrained considering the style. I would have liked a little more character and depth.

Arômes de chêne et de liège, notes citronnées et acides. Robe blonde et trouble, effervescence moyenne. En bouche, des notes citronnées affirmatives sont accompagnées par une touche de chêne et de liège et une présence légèrement poussiéreuse. Finale lactique et très sèche. Not as dry as some, and rather low lacticity. Very sour flavor, with fruity sweetness underlying and just a touch of caramel. A bit creamy and dusty. Nicely balanced and very drinkable. Quite a bit of bitter dryness in the finish. Rather well carbonated. Very nice, while not as interesting as some, but excellently done.
