Unblended lambic is the purest form of lambic. This rare specialty is typically only found in the lambicmakers’ home region, although one bottled example – Cantillon 1900 Bruocsella Grand Cru – is produced. Unblended lambics will vary in character from barrel to barrel, can be found in a variety of ages, and may have been aged with fruit in the cask. They tend to be still, with flavours whose edge has not been taken off by blending.
