cryoconcentration

 

Cryoconcentration is a process used in the making of ice ciders where the apples are harvested in autumn and stored until mid-winter as opposed to cryoextraction where the apples are left to freeze on the trees. They are then pressed and the juice is left to freeze outside naturally until it is sufficiently concentrated and then gets cold fermented.
