cryoextraction

 

Cryoextraction is a process used in the making of ice ciders where the apples are left to freeze on the trees at the mercy of the weather until they are harvested in mid-january. They are then pressed and the juice is cold fermented for several months. This method is costlier and less efficient than cryoconcentration but is more similar to the ice-wine making methods.
