Fire Cider (or Cidre de Feu) is a product developed in Quebec in the wake of the ice cider craze. It shares a lot of the aromas and flavors of an ice cider, is usually still and contains between 8 and 13% abv. The difference with ice cider lies in the process. While the sugars in ice cider are concentrated by freezing the unfermented apples and/or apple juice, cidre de feu uses heat to gently evaporate water from the apple juice before fermentation (after fermentation would make it a form of distillation - an entirely different process).
