Describe the effervescence of an alcoholic beverage when a it is artificially injected with Nitrogen. Nitrogen is largely insoluble in liquid, which contributes to the thick creamy mouthfeel (compared to CO2 which is more aggressive on the tongue and more aroma forward). This effect is helped by a special Tap piece restrictor plate known as a "Creamer" that forces the beer through tiny holes before it lands in the glass, or a Nitro widget for cans. That process causes the “rising” effect that is topped with the head.
