Technique used to make Sour Beers in a short time. Sour Mashing and Kettle Souring (also known as Sour Worting) are two process-based techniques for Quick Souring. It is also possible to simply add lactic acid directly (Lactic Spiking). The advantage of these methods is obvious: they’re fast. The disadvantage is that they’re really only good for producing a relatively clean Lactic character and won't provide a more complex funk character like Mixed Fermentation could do.
