The “Wild Ales” are catch-all styles for any non-traditional Mixed Fermentation golden to amber colored beer where the implementation of a microorganism other than traditional brewer’s yeasts ensures a drier, thinner, funky product. Such microorganisms includes Saccharomyces and Brettanomyces but not lactic-producing bacteria. Younger versions are brighter and fruitier, while older ones possess more depth of funk and may lose more of the base style character. A funky / barnyard yeast taste dominates the profile without the Sour aspect being too relevant.
