For beers using WLP644 "Saccharomyces bruxellensis Trois" wild yeast in their fermentation process. This Belgian strain, used traditionally for wild yeast-like fermentations and formerly mistakenly known as Brettanomyces "bruxellensis" Trois. It produces a slightly tart beer with delicate characteristics of mango and pineapple. Can also be used to produce effervescence when bottle-conditioning.
