Piana złamanej bieli, początkowo w postaci średniopęcherzykowego rachitycznego pierścienia, który po chwili opada do zera nie pozostawiając lacingu. Po zamieszaniu szkłem zauważalna oleista faktura. Aromat: Złożony, przyjemny. Pomimo słodkiej, słodowej, suszono owocowej dominacji, to przejawia pewien powiew jeżynowo - malinowej rześkości. Na średniowysokim poziomie dominuje słodowość biszkoptów, herbatników, miodu, karmelu, melasy i akcentu gorzkiej czekolady uzupełnionych średnimi, lekko kwaskowymi jeżynami i malinami, ale także kandyzowaną wiśnią, daktylami i figami oraz niuansem bananowym. Na niskim poziomie kontra gładkiego alkoholu oraz pieprzowych fenoli. W tle nuty kwiatów i ziół oraz majaczący niuans nawiązujący do sosu sojowego. Smak: Wielowymiarowy, zbalansowany. Na pierwszym planie na wysokim poziomie słodowość skórki chleba, biszkoptów, herbatników, orzechów, miodu, karmelu, melasy i muśnięcia gorzkiej czekolady, która jest przyjemnie zbalansowana średnią maliną oraz lekkimi jeżynami wnoszącymi delikatną kwaśność. Dalej pojawia się także średnioniska kontra fenolowej pieprzności uzupełnionej niskim alkoholem oraz ziołowo – kwiatowymi nutami. W tle niskie daktyle i figi oraz majaczący dojrzały banan. W ustach słodkie, treściwość średnia – gładka, aksamitna; wysycenia brak, lekkie rozgrzewanie alkoholowe. Goryczka niska, głównie pieprzowa, ale także ziołowa i alkoholowa, krótka, ale odznaczająca się w smaku. Finisz słodki, lekko pieprzowy z bogatą słodowością oraz nutami kwaskowych malin.

UPDATED: JUN 11, 2023 #6350 7 years aged. Lightly cloudy, amber to red, without head. Aroma of dark fruit, red grapes, red wine, aged, clove, orange jam, cinnamon, dried fruit. Taste is moderately sweet, lightly bitter, same as aroma, alcohol, orange peel, plums, mirabelle, quince, honey, vanilla, licorice. Fuller body, low carbonation.

UPDATED: JUN 9, 2023 Bottle 0.75l from our archive, well, long time in our 'cellar'... Cloudy, reddish amber colored. AROMA- vinous, dried sweet dark grapes, caramel, red berries, liquor, strawberries, cinnamon, clove. FLAVOR- smooth, moderately sweet, lightly bitter, dried grapes again, berries, jam, plums, caramel, liquor, clove and cinnamon. Fuller bodied. Really nice one.

UPDATED: AUG 20, 2021 (Bottle, 2016 vintage) Dark amber colour with frothy, tan head. Spicy, malty, vinous nose with apricots, ripe pears, honey, treacle-toffee, bread and coriander. Malty, fruity taste with notes of apricots, orange marmalade, honey, orange, pears, banana, treacle-toffee, coriander, bread and a vinous finish with low bitterness. More than medium body, sweet. Complex, warming and quite tasty. Very nice.

UPDATED: JUL 8, 2020 Weizendoppelbock mit brutalen 10,0 % Alk und geradezu unglaublichen 24 % Stammwürze. Das wäre dann sozusagen ein 5-fach Bock. Limitierte Auflage Frühjahr 2016. Höchst unpraktische 750 ml oder 375 ml Sektflasche. Farblich an der Grenze zwischen hellem und dunklen Bier. Schaumbildung muss erzwungen werden und hält nicht lange. Schöner, besonderer Geruch - sehr süß, etwas Karamel, Most, Sherry, Malz, Gewürze und Blumen. Schön weich. Süße ist deutlich vorhanden (aber nicht zu dominant), etwas Frucht, Malz, Honig und Karamel (das etwas zu lang in der Pfanne war). Harmonisch fügen sich außergewöhnliche, würzige Noten ein - irgendwo zwischen 'Italienische Kräuter' und 'Lebkuchen'. Der reichlich eingesetzte, aromatische Hopfen dürfte hierfür Verantwortung tragen. Dieser liefert auch bittere Noten, die sich mit denen des extrem hohen Alkoholgehalt mischen. Der ist auch der einzig echte Schwachpunkt. Der Alk ist zu jedem Zeitpunkt sehr deutlich zu schmecken (auch wenn man blindverkostet eher nur um die 8 % schätzen würde). Macht zwar ein schönes warmes Gefühl im Bauch (wie man es von Likör kennt), stört aber den Genuss recht drastisch. alles in allem nicht schlecht, aber einfach zu heftig - zu viel von allem. Die Schneider Weisse TAP5 Meine Hopfenweisse und die TAP 4 Meine Festweisse sind ähnlich aromatisch, aber ausgewogener und mit allgemeinverträglichem Stammwürze- und Alkoholgehalt.

UPDATED: MAY 29, 2020 Bottle, 2016 vintage. Brown nutty colour, hazy. Wheat malty sweetness, aged notes, like an old ale, barley wine and weissbock mixture. Even some almond cake there. Fullish bodied, smooth, soft. Low or very soft bittering, leathery, almost woody old malt, weissy spices, on the sweet overripe weissbock side tho. Really nice. Might have been even better some years ago, feels just a tad tired now. Clean still and all.

UPDATED: NOV 10, 2019 Piwo koloru herbaty prawie klarowne z solidną pianą. Aromat intensywny słodowo-owocowy. W smaku podobnie owoce solidna podstawa słodowa, trochę wychodzi alkohol.

UPDATED: NOV 5, 2019 12.5oz bottle. 2016. Pours a russet-copper with a tiny, instantly-dissipating beige-ish head. Aroma is apple, cotton candy, caramel, fig, light clove, a little honey, a little red fruit, and some wood. Taste is plum, apple, wood, honey, caramel, booze, slight leather, candy, wheat, a little banana, slight fig, and some yeast esters. Sweet and fruity. Dry finish. Medium-full body. Moderate carbonation. Smooth, vicious yet slick mouthfeel. Mead-like. [3/5]

UPDATED: OCT 31, 2019 Draught @ Ginger Man (10/25/19). Light;y cloudy reddish amber with small creamy light beige head, woodsy caramel aroma, low carbonation, medium bitter caramel taste with strong woodsy flavor, dried fruits, thin body, long medium bitter finish. Very tasty.

330ml bottle at the Schneider Weisse Brauhaus, Kelheim In 2016. Hazy brown with a big offwhite head. Aroma of tinned fruit, candy floss, wheat, yeasty esters and dried fruit. Nice body and warm boozy note to it. Interesting mix of fruity, grainy and some earthy flavours.
